Video - The process of raw cheese production - The health and well-being of intensive animal farming
Raw cheese is a cheese product produced in a way that is unusual nowadays. While, hundreds of years ago, our ancestors enjoyed unpasteurized cheese, today few are those who produce it following the traditional way and highlighting the terroir of the area. This is because along with pasteurization, not only bacteria are killed, but also the aromas and enzymes that create peculiarities and characteristics that "testify" to the area (terroir) where it comes from. The yellow cheese that started to be piloted at the American School of Agriculture is an excellent quality cheese from the famous AFS cow's milk that is not pasteurized and therefore unique in texture and taste. An additional determining factor in taste, the importance of which the consumers only relatively recently began to realize, is the well-being of the animals whose products end up on our table. The Strategic Project Management Office, in order to inform all those related to the livestock sector, creates educational / informative videos for well-being of animals in the context of the Raw cheese project, presenting at the same time in the first of them, the necessary steps for the production of this cheese. ...
